Chilled Chocolate Avocado Pudding
On the weekends Treats in our house of love & abundance are very important.
I have wanted to make this for ages Chocolate Avocado Pudding, smooth, rich, luxurious & sensually yummy....
I am also a huge food of the God's fan Cocoa, I eat loads, it is a little controversial in the raw food world at the moment ..however I don't care ;-0
I am going to keep loving my love for Cocoa unless my body says not too..
Why is cocoa a Goddly food?
You can read my blog on Cocoa, for now all you need to know is it loves & perks up you day, my wake up call is now a bowl of almond milk & cocoa powder (I admit not raw because it is hot, but it has replaced my 10 year coffee addiction & I now glow!! I add raw cocoa nibs to smoothies & for me that is only goodness.
Wanna make some Cocoa sweetness?
I have taken this recipe from Sarma Melngailis book Living Raw Food
(one lucky duck)
Equipment
High speed blender (my best friend)
You will need
Hand full of pecans (preferably soaked & dehydrated)
A cup of clean water
half a cup of cocoa raw powder
a cup of sweetener like argarve/honey/maple what ever suits you?
half a cup of coconut butter/oil room temp
2 medium avocados
I basically put it all into my blender & voila.....
(if you do not yet have a high speed blender you have to be allot kinder to a domestic one Take it easy)
serve as you desire?
(secretly lick the spoon, your fingers & the bowl & your done ;-)

Its the wewekend Raw Pancakes are up!
We love Buckwheat it is not a wheat it is a seed full of goodieness
Soak raw Buckwheat over night in water then sprout Buckwheat for 12 to 24 hours till grows a tail (that proves it is alive)
Dehydrate for 12 to 16 hours till crunchy
this can be eaten as Buckwheat cereal made into Buckwheat crunchies (coming soon very yummy)
You can make biscuits & flours & many things from Buckwheat (a high speed blender is a must) I use a vita mix. Worth its weight in gold.
Buckwheat Pancakes
500 ml clean water
150g raw buckwheat
100g of golden flaxseed
100g macadamia nuts
20g mesquite powder
20g lucuma powder
20ml og raw honey or agave nectar
a pinch of pink himalayan salt
To have these ready fr Breakfast prepare the night before & leave overnight i the dehydrator.
Serve with a lemon or Maple syrup, fruits or you could go crazy & have raw almond, vanilla, cocoa ice-cream its all about the love & respect Baby!!
Blend/Grind your dry flaxseed & buckwheat to make a flour
Blend up all the other ingredients (high speed blender required for all the above or it can get sticky stucky!)
Should be consistency a little thicker than pancake batter as it will go into the dehydrator on a tray.
If stiff add more water trust your self always....
prepare your trays with sheets temp 115 frnheight / 46 degrees
Pour the batter onto each tray what ever size you like your pancakes?
Leave for 6/8 hours flip when they are looking ready to flip (you could do this first thing when you arrive in your kitchen in the mourning before breakfast)
& dehydrate fro a further 2 hours & serve
Pancakes can also be stored in fridge in an airtight container & separated with greece proof paper for the following mourn (I made far to many for the two of us) you could also half the recipe to make less depends on the appetites of your peeps?
Dehydrate to slightly warm after refrigeration if you do store?

My friend is popping rond for supper & wine...
....and she Loves Mushrooms, so mushrooms it is!
I have adapted Sarma Meingallis's King Oyster Mushroom satay recipe & it was really good & very impressive, I think my friend will agree as she ate what Coco didn't....
Equipment
Blender
Dehydrator
I used regular Oyster Mushrooms & Field Mushrooms (I used shazzies recipe for mushroom nuggets not in original but added to the dish)
Marinade the Oyster mushrooms in
Marinade
Zest of an orange & a lime or 2
I used 1 cup of sweet rice seasoning used for the sushi as I did not have sake it worked well
a thumb of ginger depending how hot you like it?
Thai chillies seeded (obviously add this later when serving if feeding kids too?)
spoon of argarve or honey teaspoon of pink himalayan salt
shallots optional I didn't have any were not missed.
Blend this lot
Pour over Oyster Mushroom for as long as you have
Place in dehydrator at 115 degrees/46 c
For about 3 hours before serve
Shazzies mushroom nuggets
(I have slightly adapted this recipe)
these nuggets can be made a as a solo dish they make great finger food with salsa & dips or part of any meal & great for kids & grown up kids loove em too!
Wash & Cut 3 large field mushrooms
(depends ow many are eating this was for 3) remember they will shrink!!
Place in a large bowl
pour half a cup of sesame seed oil
pour a couple of spoons of tereaki sauce
sprinkle a few generous handfuls of pre ground (can be done i high speed blender or coffee grinder) flax seeds.
with your hands gently mix the contents of the bowl till all mushrooms look covered evenly
place in dehydrator for 6 or 7 hours so they become crispy & ready to serve (very moorish)
Bok Choy Greens
wash
cut
add some red pepper sliced as desired
dress with toasted sesame seed oil & braggs liquid aminos
avocado coriander puree
3 ripe avos
1 cup fresh cut coriander
half cup of fresh squeezed lime juice
spoon of ground coriander
teaspoon pink himalayan salt
blend
serve with meal as seen in picture
Place greens on plates, a generous serving of the avocado coriander puree and p place your mushroom on top coriander & fresh Chile (optional) to complete lotsa love serve up, gratitude & enjoy.... this is really good!

make Mine Almond Milk!
Calf’s drink Cows milk from cows. New born baby’s drink breast milk from there human Mama’s this model clearly works.....
Fully grown humans do not NEED to drink milk! Or any other product related to Dairy produce. What ever tells you you ‘should’? Oh yes! Human conditioning & the idea that you need the calcium....... YEA RIGHT...!!! Time to re-educate & make an informed choice!
Some facts!

Do you know that the marketing to drink as much milk as possible because it is ‘good for you’ comes from our grandparents time in the war when there were rations on food & an abundance of milk!
Do you know that to get cows to produce the amount of milk that we consume in these times of child obesity allergic reactions & IBS symptoms that the farmers pump those mother cows full of chemicals, man made hormones. Now, you may not care so much for that poor cow who’s destiny it is to have painfully full udders & her knew born calf taken away from her & mostl likely shot To spend her life strapped to an artificial breast pump, to fill cartons of full fat, half fat & O%, to put in your take away lattes, cappuccino, breakfast cereal & ice-cream's.

Why is Breast Cancer so rife????
Drinking a small amount of milk fresh from a cows udder is good for some of us in moderation, however like most things in our modern world we are over doing it! It is the ‘MORE’ syndrom. Probably a post war genetically passed down phychosamatic symtom of ‘we may not have enough?’
Africans don’t drink milk...Asians don’t drink milk .... when they do what happens? Yes you guessed it allergic reactions! Why? Because they have not been conditioned to consume dairy! Some Asians even think westerners due to our dairy addiction, smell of cheese!!! Lovely!
Some people know they are allergic they experience severe reactions, the rest of us suffer symptoms that are so subtle yet severe... you may have become so used to your symptoms that you don’t even notice them there..!
What kind of symptoms am I talking about? Holding weight, feeling bloated, digestion issues, skin problems, flem, congestion, snoring, lethargy, womens issues, PMS, colds & many more.
You may not suffer any dairy allergic reactions & cope fine but there is more, do you know that dairy is Acidic?
So what is Acidic? I hear you say?

Mmmm it is not rocket science which one do you choose???
So Lets make Almond Milk!
Equipment you will need.
Blender
Nut-milk bag
x2 Liter Glass bottles
Funnel
large bowel
Soak a large handful of organic Almonds overnight.
Put into a Blender (I use a Vita Mix High speed Blender you can use a everyday blender but it is worth it’s weight in gold/daily milk to invest in a quality blender)
Half a teaspoon of Himalayan or Celtic Sea salt
8 organic dates
2 liters of filtered water (or what ever your blenders limit is?)
Organic Vanilla pods or essence
Optional organic Almond essence (just for extra yumm factor)
Blend till frothy creamy about 60/90 seconds
Pour into your Nut Milk bags can get in your health food shop or order on line.
Milk your bag till strained into another bowl, pour contents of that bowl back into your blender to pour back through a funnel into sterilized glass bottles to store in the fridge ( stores for max 48 hours in the fridge)
Shake before use & enjoy!

Raw Sushi
I have always been a big fan of Sushi, however I am over the fish thing & even more so by what we are doing with our over consumption of fish & to our oceans!! This is actually yummier than raw fish & you do not get that residue smell of fish post meal always a good thing.
This is from Shazzie’s book ‘Evie’s Kitchen’ she got the recipe from chad @ www.rawchef.com
You will need
Equipment
A blender to make the cauliflower rice
a sushi roll matt but not essential
Ingredients
Sushi Rice
3/6 cups of Parsnip & or cauliflower (adapt to how many you are feeding)
1/2 cup pine nuts (very expensive at present use less rather than more)
3 table spoon of flax oil or hemp oil
1 tble spoon of toasted sesame oil
1 tble spn of Mirin rice vinegar or apple cider
1 tble spn sea salt
1 tble spn chives or spring onion (optional)
black/ white sesame seeds.
Sushi Vegetable Maki rolls
Nori sheet (Seaweed sheets can buy in most Asian shops)
parsnip cauliflower Rice
Red & yellow peppers
cucumber
avocado
Shiitake Mushroom (pre marinated in olive oil & tamari)
Tamari & Wasabi to serve
To make
Place nori sheet on a clear clean surface, spread a few tble spoons of the rice evenly across 1/3 of sheet leave space at top & bottom to roll. assemble choice of vegetables in a a layer on top of the rice & roll tightly.
Once in a roll use some of the marinate from the mushroom to wet the seaweed & seal your roll. Once the roll is tidy cut into small Maki rolls about an inch apart. (looks so pretty)
Place on a serving dish (preferably in Asian theme)
I served with some lightly steamed adami beans (can buy in frozen department of most Asian stores) with Miso soup & condiments Tamari with Wasabi, if you really want to go to town you could make some ginger.
Eat fresh or put into the fridge to sit & serve later.
This is a kid friendly sort of novelty supper. Coco loved this & the whole Japanese experience.

just right Raw Chocolate Brownies
Just right!
From Shazzie Book Evie's Kitchen (Brilliant!)
500gs Buckwheat soak over night rince & blend (I blended into a flour after soaking & dehydrating maybe more moist shazzies way?)
250g pecan nuts
200g shelled hemp seeds
120g raisins I soaked (for extra juiciness)
50g mesquite powder
4 soft dried figs soaked for few hours
2 ripe bananas
20g raw Cocoa powder
10g golden flax seeds
10g maca powder
figs, bannahs, flax seeds, maca, cacao, blend preferably in a high speed vita mix but any blender will do it!
chop up pecans,
mix all above together should be a thick moldable cake mix texture
spread onto your dehydrator tray lined with a sheet mould into a large 2" thick rectangle
Place in Dehydrator @ temp 115 zero farenheight/ 46 centigrade
if it goes in early morning by mid day turn onto a tray without a sheet slice into brownies.
ready for afternoon tea or prepare night before & turn before you head to sleepy pies!
Everyone loves Chocolate Cake!
Yes this is as Yummy & chocolaty as you can get it!
Receipe adapted from Ani Phyo's Raw food desserts.
Cake
1 cup medjool soaked Dates
3 cups of soaked Walnuts Soaking (cleans nuts too)
2/3 cup Cocoa powder
Argarve syrup opptional & as you like?
Icing
3/4 Coconut Oil/butter
1/2 cup Cocoa Powder
Argarve Syrup as sweet as you like
Blend cake ingredients
make into 2 same size cake shapes for a bottom & top
put into fridge to sit
Take out
put lots of raspberries in middle (can be frozen)
Squige together
Pour icing over & cover
put back into fridge to sit
decorate as you wish!*
Eat with Gratitude & Love!
Great with a Glass of cool sparkling* champaign!
